RECIPE: Cajun Shrimp with Zucchini Noodles

I've been trying to incorporate healthy eating eating into my lifestyle.
Of course, I can't just flip the switch. So I'm going at it, gradually..
That's why instead of having only zucchini noodles,
I had a mix of zucchini pasta and regular pasta as well.

I was pretty keen on trying out Zucchini Pasta with Cajun Shrimp!

So, most websites hinted the need of a spiralizer to make the zucchini into noodle form, but I found another way with something that you probably already have in your kitchen.
A grater
Yes, you heard that right. You can use an old-school grater instead of one of those fancy spiralizers.

And that, is pretty much how she does it.
I didn't believe it would be this easy at first. But I tried it out, and guess what!
IT WORKS.
That's my attempt on making zucchini noodles with a grater.
Just remember when you're doing it, when you reach the middle part where the seeds are then its time to move on to another side.
(the seed parts don't hold the zucchini very well and it'll end up in short broken bits)
Ingredients (Serves 1)
1 zucchini, washed
1 tsp olive oil (+ some butter if you'd like)
1 clove of garlic, finely minced
6 shrimps, shelled
A splash of white wine
A handful of chopped parsley
Marinade
Chilli flakes
Cajun seasoning
Smoked paprika
Salt
Black pepper
Olive oil
(I don't really use measurements when I cook so just go with the flow!)
Instructions
Place all ingredients of marinade into a bowl with the shrimp. Mix it all together and leave aside.
Place a large pan over medium-low heat. Add the shrimp to the pan and cook them for 1-2 minutes before turning them the other side. Cook other side for 1 minute until cooked throughout. Transfer shrimps to a bowl, leaving any remaining liquid in the pan.
Increase the heat to medium. Add the olive oil (and butter) and let it heat up for about 1 minute. Add the garlic and cook them for 1 minute, stirring constantly. Add the white wine to the pan. Using a wooden spoon, scrape the bottom of the pan for any brown bits. After about 2 minutes, add the zucchini noodles. Stir the noodles occasionally for about 2 minutes to cook and soften them.
Don't cook the zucchini noodles for too long or else it'll get mushy and nobody likes mushy pasta.
Return shrimp and parsley to the pan and toss to combine. Season with salt and pepper.
Serve immediately.
ALL DONE!
